Taco Knockdown

Taco Knockdown was a blast.

Bistro Boudin Executive Chef Misael Reyes created an amazing taco inspired by El Salvadorian dish, Chanfaina.  Chef Misael braised the meat in chicken stock with onion, tomato, shallots, green bell pepper, red bell pepper, scallions, cumin, achiote, lemon juice, oregano, and bay leaves. He then chopped the meat finely and strained the braising liquid to create a sauce.  Including sourdough was a must, so a special cilantro sourdough tortilla was created for the delicious dish.  Huge thank you to Eat Drink SF for having us!
